These are the best pancakes of ANY KIND! I have PCOS so gluten-free is better for me.
This recipe is one everyone should try no matter if you like gluten-free or not.
My husband and son, now want these instead of our regular AP flour pancakes from now on.
The only thing I changed was using butter melted instead of bacon grease and adding 1 TBSP extra of sugar.
You do not even need syrup for these because they are so delicious on their own and they fluff up so light and fluffy like no other pancake i've ever had anywhere.
NOTE: Trust the thickness that Chef Todd mentions. Just spread out the pancake batter. Somehow its like magic and fluffs up. You might turn down heat on skillet to Med High if you dont have griddle.
TRUST US! They are worth it!! You can easily serve these to friends and family and they will NEVER know they are GF.

Wow! I do not have gluten sensitivity issues but my mother and several friends do. So I had to try and it is a hit I like my batter a little thinner so added extra milk. I had just seen the Facebook post with the blended raspberries cooks in it and it was just over the top. Kids loved it withou any extra syrup.
